We have been trying to save money, because well, Grad is not cheap. So for a family date night I made burritos and Mexican rice instead of going out for dinner. I have to say that it was pretty darn good. It was probably the best recipe that I have found for Mexican rice that gets it pretty close to restaurant flavor.
Then we decided that try out the $1 scoop ice cream place in Rexburg called "Thor's". It was delicous! If you live in the area I highly recommend going, completly afforadble, and they have Reeds ice cream, which is so good!
Ellie had so much at Thor's, and kept running up to this other kid who didn't want anything to do with her. We came home and put Ellie to bed, and watched a movie.
It was a fun, cheap night!
